Gluten-free and Paleo baking can be tricky, and most recipes call for either coconut or almond flour/meal. Here is a great alternative if you are looking for something a bit different!

Ingredients:
2 cups raw cashews
3 eggs
1 Tbsp coconut flour
1 tsp sea salt
1 tsp baking soda
1 Tbsp lemon juice or apple cider vinegar

Chop the cashews in a food processor until they are fine, similar to almond meal
Mix cashews with the 3 eggs
Add 1 Tbsp coconut flour
Add 1 tsp sea salt
Mix well

Add 1 tsp baking soda (do not mix!)

Add 1 Tbsp lemon juice or apple cider vinegar
Mixture will bubble up (think grade school volcano project)
Allow the mixture to bubble up for a few, then mix well

Plop large spoonfuls of the mixture on a lined baking sheet

Bake at 385 for approximately 12-15 minutes or until slightly golden on the top

Remove from oven and let cool

Enjoy with your favorite fruit topping, on a burger, as chicken dumplings or any other recipe where biscuits may traditionally be served!
