Ingredients:
1 cup coconut milk
1 cup mayonnaise
1 1/2 – 2 Tbsp garlic granules
1 Tbsp black pepper
1 bunch chopped fresh dill
Mix all ingredients until well-blended

Use as dressing on your favorite salad or as dip for your favorite vegetables!
Can also use in place of mayo in chicken salad, as a marinade for baking chicken, or mix with ground beef before making burgers or meatballs!
Enjoy!

What kind of mayo do you use? I can never find one that doesn’t have a bunch of crappy oils in it.
I make my own. It’s very easy to make if you have a hand blender (immersion blender). This is the recipe I use: pasteurize two eggs by bringing eggs in water to about 142 degrees F and then boiling for 3 minutes at about 142, add one of the eggs plus the yolk of the other egg to 10 3/4 ounce light olive oil in a cup that fits your immersion blender, add 2 tsp lemon juice, add 3 1/3 tsp vinegar, add 1/2 clove garlic, add salt and ground pepper to taste, immerse your blender to bottom, plunge at bottom until bottom becomes thick (a few seconds) and then slowly plunge higher, creaming the mixture as you go, until you get to the top. This immersion blending takes maybe one minute altogether. Easy, tastes amazing, can customize ingredients, and healthy. If you know the farm you get your eggs from, you may not even need to pasteurize the eggs.
